SHRIMP COBB SALAD
Ingredients:
handful of mixed greens
2 boiled eggs
1/2 cup sweet corn
1 shallot
2 medium sized tomatoes
2-3 Persian cucumbers
1/3 cup crumbled feta
1/2 avocado
4 celery sticks
1/3 cup parsley
1 lb. shrimp, pan seared
Dressing: olive oil and balsamic vinegar
Directions:
1. Chop up all the ingredients. In a bowl, combine everything, add dressing, sprinkle with salt and pepper to taste and top it off with shrimp!
For the shrimp:
1. Pat them dry then season with garlic powder, salt, pepper, oregano and paprika.
2. Coat the pan with oil and cook over medium-high heat for a few minutes until crispy!
