HERBED COUSCOUS EDAMAME CASHEW SALAD

 

Ingredients:
1 cup cooked couscous
1 cup kale, chopped
12 cups spinach, chopped
1/2 cup fresh basil
3 carrots
1 cup edamame
1/2 cup cashews
1/2 avocado
1/4 cup hemp seeds

Dressing:
1/3 cup coconut aminos
2 tbsp tahini
1/2 lime juice
1 tbsp olive oil
1/3 tsp salt
1/3 tsp ground ginger
1 garlic clove, minced

Directions:
1. Mix salad ingredients together in a large bowl.

2. Whisk dressing ingredients together until combines and pour over salad. Toss and enjoy!
